Strawberry Scone Filling
This strawberry scone filling was a recipe Imade up when I wanted something heartier than whipped cream to put on our scones! When I visited my friend in Oxford our trip to the grocery store was one of my favorite things. I don’t know if I’ve ever seen that many varieties of dairy products in my life, let alone one place. The stores we visited weren’t even that big!
My uncle had raved about the clotted cream when they visited the UK, so of course, I had to try it. It’s thicker than most dairy products we have here, but more spreadable than cream cheese… Perfect for scones, but impossible to find in the US.
For our yearly Great British Bake Off watch party I decided to make these scones from the Downton Abbey scones that Sally Clarkson sent with the launch of her book set in Oxford! You can listen to our conversation about it HERE.
We have a tradition every November of watching that season’s Great British Bake Off. After the first episode, we all pick the person we think will go “all the way” and we cheer for them the whole season. But for our first episode of the year, it seems fitting to have a baked good to eat.
Here’s how I filled our scones:
Strawberry Scone Filling
- 2 ounces of cream cheese
- 2 tablespoons of soft butter
- 2 tablespoons of strawberry jam
I put it all into a pint jar and put only one whisk on my electric egg beater. I mixed them all together on a high speed until it had a whipped consistency. It took probably 3-5 minutes.
I put a hearty amount on to every scone, then put a cut strawberry into it!
It got high reviews from the whole family, even though they were a bit miffed that British scones are less sweet that the ones I usually make. I thought it was incredible though!
